When it’s smack dab in the middle of a hot summer, the last thing I want to do is cook! These super easy slow cooker salsa chicken tacos are totally one of our go-to recipes and the whole family thinks it’s delicious. Use a clean salsa from the refrigerated section of your grocery store (bonus points for homemade salsa but ain’t nobody got time fo’ that, amiright?!) to make this extra healthy. Toppings like avocado and queso fresco sprinkled over the top make this ahhhh-mazing.
This is also one of the meals that I love taking new moms when we sign up to bring a meal after the baby is born. Usually, they’re a little overwhelmed with casseroles and carbs galore at that point. I get to ride in with

This recipe makes a huge amount of salsa chicken. You can totally cut the recipe in half or it makes crazy awesome leftovers all week. We’ve had it with eggs on breakfast tacos, in quesadillas, and added to loaded baked potatoes (or sweet potatoes… mmmm!). So many options!
This southwest spice blend seasoning is my favorite! I originally found it at Costco but it looks like you can snag some online. It’s a huge container so it lasts forever and it tastes amazing in every southwest or Mexican dish that I’ve tried. Gotta love a multitasker.
- 2 lbs chicken breasts
- 16 oz salsa
- 15 oz can of corn, drained
- 1 tbsp southwest seasoning
- Optional toppings: queso fresco, avocado
- Add chicken and salsa to slow cooker. Add corn and southwest seasoning and stir to combine and cover chicken.
- Cook on low 4-6 hours.
- Serve on warm tortillas and top with avocado and queso fresco.
