I’d like you to meet the easiest side dish that ever lived. It takes about 15 minutes from start to finish and most of that is just letting the orzo boil. Have you ever cooked with orzo before? It’s really just an Italian pasta but I love that it’s a fun switch from traditional noodles! Easy lemon orzo with spinach, I love you.
We’ve had a weird kind of weather week here in Dallas! With unusual cooler weather, we finally got a little taste of fall! 70 degrees, you’re my favorite. Of course, the next day we were right back with scorching heat! I’m getting a few more summery dishes in while I can! While we had some yummy chicken kebobs on the grill tonight, I needed to come up with a quick side dish. This lemon orzo just makes pasta feel so fresh and light. The spinach also helps to add in some yummy nutrition.
My rush for getting dinner on the table? There were 2 very fast, very rowdy little superheros running around the house today. You know those days! When we’re about 3 seconds from pure chaos! I knew I needed to be fast in the kitchen. Although, superhero capes and masks are pretty much the cutest thing ever.

The lemon dressing is super simple. Just some lemon juice, olive oil, minced garlic, salt and pepper. Ingredients that you probably already have in the kitchen. After the orzo is cooked until al dente, everything is just tossed together. The fresh spinach leaves wilt just the right amount when they’re stirred into the warm orzo. Basically, its just awesome and yum. 🙂
- 2 cups dried orzo
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cups fresh baby spinach
- 2 garlic cloves, minced
- ½ tsp salt
- ¼ tsp pepper
- Bring a large pot of water to a boil. Cook orzo according to package directions, about 10 minutes, and drain.
- Meanwhile, combine olive oil, lemon juice, garlic, salt and pepper in a small bowl.
- Transfer orzo to serving bowl and stir in fresh spinach. Gently stir and allow spinach to wilt.
- Pour in lemon dressing and stir to combine.
