Cooking in our CrockPot is probably one of my favoritest things ever. There’s no crazy frenzy at the end of the day. No fighting to keep the kiddos happy while I’m scrambling to find something to make for dinner. I can toss all of my ingredients in the slow cooker earlier in the day, allow it to do all of the work for me, and a yummy meal is waiting for us at dinnertime. Can we just pretend we have a personal chef? 😉
Last week, we were walking around our most favorite place in all the land (Target, of course) and I was trying to find a new, fun marinade. It turned out to be sooo yummy. The pork was so moist and tender and literally just falls apart. It was just the right balance of sweet with a little bit of spice. You can definitely add more chipotle powder to crank up the heat but we wanted to keep it toddler-friendly.
The super simple ingredients keeps this inexpensive, too. And easy. I like easy. Sometimes the simplest recipes are the greatest ones, right? These are the kinds of recipes that I will make over and over again. I love finding a new go-to recipe for busy weeknights.
- 2 lbs pork tenderloin
- 15 oz berry veggie Naked juice smoothie
- 1 tsp chipotle powder
- 1 tsp garlic salt
- Place meat in the slow cooker. Sprinkle with garlic salt and chipotle powder. Pour juice over top.
- Cook on low 6-8 hours.
- Serve with extra sauce from the slow cooker poured over the top.
